Food Design tapas



Our recycled tapa is a three-part dish called, Vermouth in a bite. Three seashells filled with slightly different ingredients are presented on a salt bed. On the first and third tapa is a black olive presented on a Vermouth sea, finished with a crispy bun made from orange zest. The middle tapa has a cheese crumble filling with a spherification made of Vermouth on top. Each tapa presents a black pearl inside of a seashell which combined with its refined finish creates a truly sophisticated and unique tapa.
